A nor'easter blows in bringing floodwaters, gusty winds, downed branches and cool weather. Stuck at home, my remedy for boredom is soup. That involves some foraging in the fridge. Cooked chicken and frozen chicken dumplings should make an adequate soup.
I am for a spicy Thai broth. Dried red chiles, galangal, kaffir lime leaves and fish sauce dominate the palate. Browned onions and garlic play its role. This is an easy to compose soup. Lemony and mouth tingling, the soup fits the gloomy weather bill.
THAI CHICKEN AND DUMPLING SOUP

1/2 cup minced Red Onion
3 teaspoons Vegetable Oil
2-3 dried Red Chiles
Lemon Rind strips from 1 Lemon
1 teaspoon Garlic Paste
