Tequila Watermelon Pops






July is synonymous with hot days, barbeques, fireworks  and backyard parties. As my son prepares to meet friends after three months, I help him to make these adults only watermelon pops.

Sugar syrup, fresh thyme leaves, lemon slices, tequila and Cointreau make a potent marinade. Watermelon triangles are left in this liquid for a short soak. Skewer them with wooden spears or use the best tool you have...your fingers! Beware... they pack a serious punch. Having made these in the past, the effects include an afternoon siesta! 


TEQUILA WATERMELON POPS
Serves 4-6


1/2  Watermelon
1/2 cup Sugar
1/2 cup Water
1 teaspoon Thymes leaves
1/2 lemon, cut into thin slices
1/4 cup Tequila
1/2 cup Cointreau
Sea Salt

Make simple syrup by combining water and sugar in saucepan.

Place saucepan over medium heat and bring to boil. Allow syrup to boil for 1 minute. Take off the heat and cool.

Add thyme leaves, lemon slices, tequila and Cointreau to syrup. Whisk well to mix. 



Cut watermelon into 1 inch thick slices. Leave rind on. Cut each slice into triangles. 

Lay the triangles flat in a wide dish. 

Pour the syrup over the watermelon. 

Refrigerate for 15-20 minutes. 

Sprinkle with sea salt before serving.

Skewer the rind with a popsicle stick or serve them as they are.



I save a few slices for our lunch...the result is an afternoon nap.
